For my W209, I plan to buy winter tires (Dunlop M3) to replace the stock 16" all-season tires. Because the wheels are staggered (16x7.0, 16x8.0), I have no choice but to keep the same tires sizes (F:205-55-16, R:225-50-16).

What do you think? Should I change the tire sizes? Will bigger rear tires (225...) cause problems in snow/ice?

Note: I like to keep the stock wheels for winter use because I plan to upgrade to larger tires/wheels next summer.

I don't think a 225 is excessive. I ran 245's on the back of my CLK 55 during the winter. I didn't drive it a lot, but it seemd pretty stable even in packed snow. I'd highly recommend checking out Nokian Hakipulitas for your tire choice. They are probably the best winter tire you can get anywhere for any price. The Dunlops are good tires, but they do not compare to the Nokians.
